Howdy, y’all! How goes it? I hope everyone had a fabulous 4th of July! We had a great one here in Charleston. [For some pics of my week, check out my instagram feed!] Today’s plan is to go out on the boat all day but i couldn’t possibly do that without sharing this healthy shrimp pasta recipe.
Because that would just be plain mean, don’t you think? This is one of those dishes I sort of just threw together. Grabbed some cheeses, some milk, some shrimp and pasta and just let the mad scientist in me LOOSE. And guys? The results of said scientific experiement? One of the best dishes I’ve ever made.
Ever. I know. Bold, bold statement. But each bite has such a complexity and depth of flavor, it’s as if I spent hours simmering the creamy, cheesy sauce and picked the shrimp right outta the ocean. I can’t explain or give you reasons why it turned out so magical, I can just say it did and show you sexy photos of it.
This succulent pasta is rich without being heavy, creamy without being fattening and filling without being “too much.” It’s the perfect way to use up your favorite shrimp and the last of your crisp white wine.
Or, in my case, buy a new bottle since I never have just a little bit of wine left. That’s madness.
Healthy Shrimp Pasta Recipe

Serves about 6.
Prep time: 5 – 8 minutes
Cook time: 20 minutes
Ingredients:
- 12 ounces shrimp, tails removed
- 8 ounces of pasta (I used linguine)
- 3 cups fresh spinach
- 5 ounces light cream cheese
- 1/4 cup crisp wine (I used Masi Masianco Pinot Grigio & Verduzzo)
- 3/4 cup shrimp or vegetable broth
- 1/4 cup light cream
- 1/3 cup parmesan
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1/2 yellow pepper, chopped
- 2 tablespoons butter
- Liberal dashes salt and pepper
- Lemon zest
Directions:
- Prepare pasta according to box. Rinse and set aside.
- Heat 1 tablespoon butter in a medium size 3 quart pan over medium high heat. Add onions and cook until soft, about 2 minutes. Add garlic and peppers and cook until fragrant, about 3 minutes. Reduce heat to medium and add in wine, broth, cream, cream cheese and salt and pepper. Cook until mixture begins to thicken a bit, about 6 minutes. Stir in parmesan, lemon zest and additional salt and pepper to taste. Let simmer another 4 or 5 minutes to thicken up. Remove from heat.
- In a small pan, heat remaining 1 tablespoon of butter. Cook shrimp for about 2 – 4 minutes or until done. Remove from pan and add to cream sauce. Add spinach to the small pan and heat just until wilted, about 3 minutes. Toss spinach and shrimp with cream sauce.
- Pour over pasta and enjoy!

It's just a lower fat and calorie cream! You can usually buy right next to the heavy whipping cream.

Made this tonight for dinner. My daughter came over unexpectantly and she soooo appreciated a great homecooked meal from Mom. I added slice portabello mushroom to the onion, garlic & pepper mix....squeezed some fresh lime juice and salt over the shrimp before sauteing them. Also added some lemon basil at the end . Will make again....May try chicken one of the times. Yummy!

This sounds like an awesome recipe... Just one thing, why do you rinse your pasta? I've always been of the belief that that's a huge no no in the cooking world, washes away all the nutrients or something like that? Anyways, thank you very much for posting your recipe :) God bless you

You rinse the pasta with cold water because if you let it sit in the strainer without rinsing, the pasta continues to cook and will get sticky. Pasta has no nutrients.

I made this for my boyfriend and I about a month ago. It was sooo good! My bf doesn't like spinach, but he didn't even know it was in this dish.He ate it all. I will be making this again.Very easy too.

Just made this about an hour ago. It was very very good!! I did make a few modifications for what I had, I used heavy cream instead of light cream and I used a seafood blend instead of just shrimp. Thank you for this recipe and thanks for all the nutritional facts that go with it! :)

This was delicious and we tried to cut calories even more by serving it over Spagetti Squash mixed w about a teaspoon of butter, a T of Parmesan cheese and salt & pepper. YUM! Thanks for this amazing recipe!!

This was DELICIOUS! I changed it up somewhat because I was cooking for 1. Instead of spinach, which I did not have, I used frozen kale. I cooked it in the water for a few minutes, then added the pasta and cooked it together. I thought the cream cheese really made it delicious!

DELICIOUS!! I used spiralized zucchini instead of pasta. Since I didn't have cream cheese, I used a bit of sour cream. Also substituted red peppers since I didn't have yellow ones. The red with the green spinach was beautiful. Quick, flexible and so so good!!

Ii just got some fresh key west pink shrimp and wanted to showcase them in a great easy recipe. This was the bomb!
I made a few changes such as adding red pepper along with the yellow, and used clam juice instead of wine since I don't drink alcohol. It was outstanding! My husband raved about it. Will definitely make this again, and would definitely make this for company! Thanks for posting!Reply

Please don't rinse the pasta. If you make the sauce and sauté the shrimp and spinach while the pasta is cooking, you can just use tongs or a spider to lift the red hot pasta into the hot sauce. Stir to combine.. Thanks for a beautiful dish for the Florida pinks that are available here in the keys.

You can use cooking wine, if you'd like. Or just omit with a broth. It's really only added for flavor, but you can use another kind of liquid.

Second time making this dish tonight and I couldn't be more pleased. Everything goes so well together! I do substitute the pasta for cauliflower rice and add in after I add the shrimp to the sauce. It soaks up all the flavors and it super low in calories! This is one of my favorite recipes now!

The reason you do not rinse your pasta is because, the sauce will not adhere to the pasta. Start your water first make your meal and during that time drop your pasta in the water. All will end at the same time... no problem with the pasta not being done at the same time.
